  • 2 large eggs
  • 1 cup milk or cream
  • 1 cup flour
  • 1/4 teaspoon salt

Preparation

Step 1

Preheat oven to 425 degrees F. Butter a tin popover pan. Using electric mixer, beat the eggs until frothy. Add milk and blend. Add flour and salt and beat 2 more minutes.
Place pan in oven until hot. Remove and fill cups 2/3 full with the batter. Bake 40 minutes.
Serve immediately, plain or with cream or marmalade.
Yield: 6 or 8 popovers.
