Ingredients

  • 1 1/2 cups yellow corn meal
  • 1 1/2 cups flour
  • 1/4 cup sugar To taste
  • 2 tablespoons baking powder
  • 3/4 teaspoon salt
  • 1 1/2 cups (12-ounces) milk
  • 2 large eggs beaten
  • 6 tablespoons liquid shortening

Preparation

Step 1

Pre heat oven to 425 degrees F.
Grease 9-inch square pan.
In large bowl stir together wee the salt, baking powder, sugar, flour and corn meal; add milk, eggs and shortening. Beat about 1 minute or until smooth. Pour into greased 9-inch square pan (I use Pam). Bake at 425 degrees F. for 25 minutes or golden brown.
Note: I add 12 drops of yellow food coloring after mixture is smooth.
