Oatmeal Pancakes

Amy's new favorite breakfast food. I usually double the recipe so there can be a few left over for later.

Ingredients
- 1.1 oz AP flour (about 1/4 cup)
- 1 cup quick oats
- 1 tbsp sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp ground cinnamon
- 1/8 tsp salt
- 1 cup buttermilk
- 2 tbsp butter, melted
- 1 large egg

Preparation
Step 1
Combine the first 7 ingredients in a medium bowl, stirring with a whisk.
Combine the buttermilk, butter, and egg in a small bowl. Add to the flour mixture, stirring until just moist.
Heat a griddle over medium heat. Coat griddle with cooking spray. Spoon about 2 1/2 tablespoons of batter per pancake onto the griddle and cook.
