Ingredients
- 2-3 cups water (enough to cover the salmon filets)
- 2 tablespoons loose green tea (or your favourite tea)
- 4 green onions, chopped
- 2 tablespoons soya sauce
- 2 tablespoons grated ginger
- 2 tablespoons honey
- 1 lemon, juiced and zested
- 2 six ounce salmon filets
- 2 handfuls baby spinach
- 1 cup bean sprouts

Preparation
Step 1
Bring the water to a simmer in a small sauce pot. Add the tea leaves, green onions, soya sauce, grated ginger, honey and lemon zest and juice. Simmer for a few moments. Add the salmon filets and cover. Poach the salmon for 6-8 minutes, until firm to the touch.
Fill two serving bowls with the baby spinach and bean sprouts. Lay a piece of salmon on top and ladle over some of the simmering hot tea broth.
