Ingredients
- 2 tablespoons olive oil
- 1 onion, peeled and chopped
- 1 tablespoon ras el hanout spice blend (or 1/4 teaspoon each cinnamon, cumin, caraway, and cardomon)
- 2 cups orange juice
- 2 tablespoons marmalade
- 2 tablespoons almond butter
- 1/4 cup chopped dried apricots
- 1/4 cup slivered almonds
- 1 1/2 cups couscous
- Salt to taste

Preparation
Step 1
Heat the olive oil in a saucepan and add the onion. Cook until softened then sprinkle in the ras el hanout. Add the juice, marmalade, almond butter, apricots and almonds. Stir well and heat to a simmer. Add the couscous and season with salt. Cover with a tight fitting led and turn off heat. Rest until the liquid has absorbed, about 15 minutes. Fluff with a fork.
