Ingredients

  • 1/2 lb bacon, cooked and crumbled
  • 1-3/4 C flour
  • 1/4 C sugar
  • 1 Tbl baking powder
  • 1 egg
  • 3/4 C milk
  • 1 C cheddar cheese, shredded
  • 1/3 C bacon grease (+ oil if necessary)

Preparation

Step 1

Preheat oven to 400 degrees.

In medium bowl, stir together flour, sugar and baking powder. Make a well in the center.

Combine bacon grease with egg and milk. Add to flour mixture. Stir until moistened. Batter should be lumpy.

Fold in bacon, cheese and 1/2 cup Grape Nuts if desired.

Grease or line muffin cups. Fill about 3/4 full. Bake 15-20 minutes or until golden. Cool on wire rack.

Can be stored in refrigerator up to 1 week or up to 4 months in freezer.
