Ingredients
- 1 Tbl plus 1 C unsalted butter, softened
- 3-1/2 C unsifted all purpose flour, plus extra for flouring pans
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 tsp ground ginger
- 3 C granulated sugar
- 2/3 C milk
- 1-15 oz can (1-3/4 C) unsweetened pumpkin puree
- 2 large eggs
- 1 C raisins
- 1/2 C chopped walnuts

Step 1
Preheat oven to 350 degrees. Grease two 9 x 5-inch loaf pans with 1 Tbl butter and dust bottom and sides with flour.
In medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg and ginger. Set aside.
In large bowl, cream together butter and sugar until light and fluffy. Add milk, pumpkin and eggs, beating well after each addition. Mix in reserved dry ingredients, stirring just unitl well combined. Fold in raisins and walnuts.
Pour batter into prepared pans and bake for 65-70 minutes, or until toothpick inserted in center comes out clean.
