Peanut Butter Cookies

Ingredients

• 1 12oz jar creamy peanut butter
• 1 cup margarine
• 3/4 cup sugar
• 3/4 cup brown sugar
• 2 eggs
• 2 1/4 cups flour
• 1 tsp baking powder
• 1 tsp soda
• 1/2 tsp salt
• 1/2 tsp vanilla

Preparation

Step 1

Blend peanut butter and margarine.
Add sugar and brown sugar and mix well. Scrape bowl.
Add eggs and beat until well mixed, scraping bowl.
Sift flour, salt, baking powder and soda and add to peanut butter mixture.
Add vanilla and mix.
Shape dough into 1 1/2 inch balls and place on cookie sheet about 2 inches apart.
Flatten slightly with fingers. Dip dinner fork in flour and press deeply across top of cookie, repeat at right angle to flatten to 2" diameter.
Bake at 375* for 8 minutes.
