Ingredients
- 1 can whole kernel yellow corn, not drained
- 1 can cream style yellow corn
- 8 oz sour cream
- 2 eggs, beaten
- 1 box Jiffy corn muffin mix
- 1 stick butter, melted
- 3 jalapenos

Preparation
Step 1
Heat oven to 350
In a large bowl stir together the corn, sour cream, eggs, corn muffin mix, butter, and 2 of the jalapenos, finely chopped.
Pour the mixture into a large lightly greased casserole dish or ramekins for smaller servings.
Bake 55-60 minutes.
Garnish with remaining jalapeno, sliced.
Serves 8
