Ingredients
- 2 cloves garlic, chopped
- 1/4 tsp salt
- 2 tbsp balsamic vinegar
- 1/4 tsp Dijon mustard
- 9 tbsp extra-virgin olive oil
- Freshly ground pepper
- 1 tbsp of your favorite fresh chopped herbs, such as basil, cilantro, Italian parsley (I like all three!)

Preparation
Step 1
Mash garlic and salt together. Stir in vinegar and mustard. Gradually beat in oil. Grind in pepper and stir in herbs.
Note: You can also make lemon vinaigrette by using lemon juice instead of vinegar.
