Ingredients
- 500 ml bottle white wine vinegar
- 3 sprigs fresh tarragon
- 2 cloves garlic, peeled
- 3 inch strip lemon zest
- 5 black peppercorns
- 1 clean bottle or jar
- 1 clean bamboo skewer (optional)

Step 1
Place tarragon sprigs in bottle
Place garlic and lemon zest in bottle - thread midway on a bamboo skewer so they don't just lay on the bottom
Fill bottle with vinegar to cover
Let steep 2 weeks, strain and return to original bottle.
Keeps indefinitely
