Ingredients
- Salt and pepper
- 4 skinless, boneless chicken breasts
- 1 tbsp olive oil
- 8 small white mushrooms, sliced
- 1 shallot, finely chopped
- 1 tbsp flour
- 1 cup chicken stock
- 1/3 cup sour cream
- 3 tbsp chopped fresh herbs of your choice
- 1 tbsp Dijon mustard

Step 1
Season the chicken with salt and pepper. In a large skillet, heat the oil over medium-high heat. Add the chicken and cook, turning once, until golden, about 12 minutes. Transfer chicken to a plate and cover with foil.
Add remaining 2 tbsp butter to the skillet and lower the heat to medium. Stir in the mushrooms and shallot and cook til tender, about 5 minutes. Season with salt and pepper, sprinkle in the flour and cook, stirring 1 minute. Whisk in 1 cup chicken stock, sour cream, herbs, mustard and any chicken juices from the plate.
Slice the chicken and spoon the sauce on top.
