Ingredients

  • CUPCAKES:
  • 1 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 3/4 cup sugar
  • 1/4 cup reduced fat cream cheese, softened
  • 1/4 cup butter, softened
  • 2 tbsp amaretto
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup reduced fat sour cream
  • 1/4 cup milk
  • 3/4 cup finely chopped Gala apple
  • 1 tbsp all-purpose flour
  • STREUSEL:
  • 2 tbsp all-purpose flour
  • 2 tbsp brown sugar
  • 1/4 tsp cinnamon
  • 2 tbsp butter, chilled
  • 2 tbsp sliced almonds
  • GLAZE:
  • 1 cup powdered sugar
  • 4 tsp milk

Preparation

Step 1

Preheat oven to 350. Place muffin cup liners in 12 muffin cups. Spray with cooking spray.
Combine flour, baking powder, salt and baking soda in a small bowl, stirring with a whisk. Combine sugar, cream cheese, and 1/4 cup butter in a large bowl; beat with mixer at high speed til well blended. Add amaretto, vanilla, and egg to sugar mix; beat with mixer at medium speed til well blended. Combine sour cream and 1/4 cup milk in a small bowl; stir with whisk til well blended. Combine apple and 1 tbsp flour in small bowl; toss well.
Add flour mix and cream cheese mix alternately to sugar mix, beginning and ending with flour mix. Divide batter evenly among muffin cups.
STREUSEL:
Combine 2 tbsp flour, brown sugar, and cinnamon in small bowl. Cut in 2 tbsp butter with pastry blender til mix resembles coarse meal; stir in almonds. Sprinkle streusel evenly over cupcakes.
Bake for 27 minutes. Cool in pan 15 minutes on a wire rack, and then remove cupcakes from pan.
GLAZE:
Combined powdered sugar and milk in a small bowl, stirring with a whisk. Drizzle over cupcakes.
