Ingredients
- 1 pound confectioner's sugar
- 5 Tbsp meringue powder
- Liquid or gel paste colouring

Preparation
Step 1
Combine sugar,meringue powder and a scant 1/2 c water
Beat on a low speed until mixture is fluffy,yet dense-5 to 7 min
To thin the icing for flooding stir in additional water 1 tsp at a time
Test the consistency by lifing a spoonful of icing and letting it drip back into the bowl-a ribbon should stay on the surface 5-7 seconds
To tint icing dip a toothpick into food colouring and gradually mix it in until the desired shade is reached
Flooding
Put the icing in a piping bag
Pipe the outline of the cookie firstThen draw tight zigzags inside the outline to fill it in
