  • 2 pounds ground sirloin
  • 2 cups diced yellow onions
  • 1 green bell pepper, diced
  • 1 cup diced celery
  • 2 tablespoons minced fresh garlic
  • 2 (10.75 ounce) cans tomato purée
  • 1/4 cup tomato paste
  • 1/4 cup packed brown sugar 1/4 cup water
  • 1 tablespoon Tabasco sauce
  • 2 teaspoons kosher salt
  • 2 teaspoons paprika
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons freshly ground black pepper
  • 2 loaves soft French bread, halved lengthwise, slightly hollowed, quartered, and toasted

Step 1

Brown sirloin in a sauté pan over medium-high heat until cooked through, crushing with
a potato masher; drain all but 1 tablespoon drippings. Transfer chuck to a 4 - 6-quart slow cooker.

Sauté onions, bell pepper, and celery in reserved drippings in same pan over medium heat until softened, 5–6 minutes. Add garlic and cook one minute more; transfer to slow cooker.

Whisk together tomato purée, tomato paste, brown sugar, water, Tabasco, salt, paprika, oregano, thyme, and black pepper, then add to slow cooker. Cover slow cooker and cook sloppy Joes until flavors have blended on high-setting, 2 hours, or low-setting, 4 hours. Serve sloppy Joes on toasted French bread.
