This one comes from Michelle Gasparian from her time living in Paris. The first time she made it was to serve at a little dinner party to some friends who were always complaining she didn't cook enough. A group of friends used to get together roughly once a week and make dinner, usually alternating who cooked and that was her night.

Skillet Steamed Fish 1 Picture

Ingredients

  • •1 tablespoon Vegetable oil
  • •1 Onion, coarsely chopped
  • •1 Garlic clove, crushed
  • •2 Large tomatoes, blanched, peeled, seeded and chopped
  • •2 tablespoons Wine or cider vinegar
  • •3/4 cup Water
  • •4 Large fish fillets
  • •Freshly ground black pepper

Preparation

Step 1

•Heat oil in large non-stick skillet over medium heat. Add onion and garlic and cook, stirring frequently until onion is golden brown, about five minutes. Add tomatoes. Stir well and cook until tomatoes are just heated through, about 2 minutes. Add vinegar and stir well.
•Push tomato mixture to one side of skillet. Add water. When liquid starts to simmer, add fish and cover the skillet. Cook til fish flakes easily, 8-10 minutes.
•Remove fish and arrange on serving platter. Add pepper to taste to the tomato mixture and stir. Spoon the tomato mixture over the fish and serve immediately.
