Coffee Cake

This is one of my Mother's (Jeannette Costigan's) recipes.

Ingredients

• Coffee Cake:
• 1 cup sugar
• 1/2 cup butter or shortening
• Dash of salt
• 1 cup strong coffee
• 2 and 1/2 cups sifted flour
• 2 tsp. baking powder
• 2 eggs
• Beat the eggs and coffee together and add to other ingredients. Bake in 2 layers.
• Frosting:
• 1 cup XXX sugar (confectioner's)
• 1 small piece butter
• Strong coffee, enough to moisten
• Mix sugar and butter; moisten with strong coffee; beat together and spread between layers and on top of cooled cake.
