Ingredients

  • FIRST GROUP of CHEESE:
  • 16oz Box Mini Elbow Macaroni or Mini Bowtie Pasta Cooked & Drained. Set Aside
  • 1 Stick Butter Melted
  • 1/4 C Flour
  • 4 C Milk
  • 8 oz Cream Cheese
  • 1 t Salt
  • 1/4 t Black Pepper
  • 8 oz Extra Sharp Cheddar Shredded
  • 6 oz Gouda Shredded
  • 8 oz Parmesan Shredded
  • SECOND GROUP of CHEESE:
  • 8 oz Extra Sharp Cheddar Shredded
  • 4-6 oz Gouda Shredded

Preparation

Step 1

Large Saucepan, Medium Heat Add Butter & Whisk in Flour. Cook 3-5 Minutes Until Sauce is Thick & Bubbly. Whisk in Milk - Amount to Make Creamy, Low Boil Until Thicked. Stir in Cream Cheese, Salt & Pepper.

Large Bowl, Combine Cooked Macaroni & First Group of Cheeses. Add to Sauce Mixture, Stir Until Blended.

Add Mixture to 11x9 Aluminum Pan Sprayed, Top with Second Group of Cheese.

Cook in SMOKER 225F, 1 &1/2 Hours Until Brown & Bubbly.

OVEN, 350F, Add Liquid to Mixture. Cover & Bake 1 to 1 &1/2 Hours Until Brown & Bubbly. Un-Cover Near End to Brown Top.
