Ingredients

  • 1 medium red onion, sliced thin
  • 2 medium cucumber, peeled, halved lengthwise, seeded, and cut into 1/8-inch-thick slices
  • 4 hearts romaine lettuce , washed, dried thoroughly, and torn into 1 1/2-inch-pieces
  • 4 large vine-ripened tomatoes, each tomato cored and chopped
  • 2 red peppers, seeded and chopped
  • 20 large kalamata olives , each olive pitted and quartered lengthwise
  • 5 ounces feta cheese, crumbled (1 cup)

Preparation

Step 1

Place chopped tomatoes into a salad spinner and spin to remove juice.

Wash and spin lettuce.

Add all ingredients together in a bowl.

Dress when needed.
