Ingredients
- 1 bunch fresh spinach
- 1/2 sliced mushrooms
- 6 slices bacon
- 2/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 tbsp. white wine
- 2 tbsp. soy sauce
- 1 tsp. sugar
- 1 tsp. dry mustard
- 1/2 tsp. curry powder
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 hard cooked eggs, chopped

Preparation
Step 1
Wash and dry spinach leaves. Tear into bite sized pieces and refrigerate. Fry bacon until crisp; crumble. Mix the remaining ingredients except eggs until blended. When ready to serve, toss the spinach and mushrooms together. Pour the dressing over all and toss to coat. Sprinkle the bacon and egg on top.
