  • 16 oz dark chocolate, chopped
  • 8 oz heavy cream
  • peel of 1 orange
  • 2 Tbl Grand Marnier
  • 1/3 C cocoa powder

Step 1

Bring orange peel and cream to boil; allow to steep for 15 minutes. Put chopped chocolate in heat-proof bowl. Set bowl over simmering water (do not allow water to touch bottom of bowl). Bring cream back to a boil, remove orange peel and pour over chocolate. Wait 1 minute, then whisk until well incorporated. Remove from heat and whisk in Grand Marnier. Cool to room temperature.

Cover bowl and allow to stand at room temperature (70 degrees) overnight.

To form truffles, scoop firm ganache with teaspoon and roll with our hands into a rough circular shape. Roll truffles in cocoa powder.

To prevent ganache from melting in your hands, wear latex gloves or chill hands in ice water and dry very well.
