Ingredients

  • Crust:
  • 3-4 Tbl unslated butter, room temperature
  • 8-12 Tbl freshly made bread crumbs
  • Filling:
  • 4 oz Brie, rind removed
  • 5 oz cream cheese
  • 2 Tbl butter, room temperature
  • 3 Tbl heavy cream
  • 2 large eggs
  • 1 Tbl minced fresh chives
  • 1/4 to 1/2 tsp salt
  • pepper to taste

Preparation

Step 1

Crust:
Smear butter generously with fingers into 8-inch pie pan. Sprinkle breadcrumbs over butter and tile to distribute evenly on all sides. Press crumbs into butter with fork, then knock out excess by tapping dish upside down. Refrigerate until ready to use.

Preheat oven to 375 degrees.

Filling:
Cream cheeses with butter. Add eggs, cream and chives, mixing well. Taste for seasoning, add salt and pepper as needed. Mix well.

Pour fillinginto prepared pan. Bake 25-35 minutes or until browned and set.

Allow to cool at least 5 minutes before serving.
