Ingredients
- 1 roasting chicken, 6-7 lbs.
- 2 Tbs. oil
- 3 Tbs. fajita seasoning
- 3 bell peppers, any color, cut into 1/2" thick slices
- 1 onion, sliced 1/4" thick
- 6 flour tortillas (8")
- Lime wedges and chopped fresh cilantro, optional

Preparation
Step 1
Preheat oven to 350 degrees. Brush chicken with 1 Tbs. oil. Sprinkle inside and outside of chicken with 2 Tbs. fajita seasoning. Place in large roasting pan. Roast 1 hour.
Meanwhile, toss peppers and onion with remaining oil and seasoning until coated. Arrange in pan around chicken. Roast until chicken is no longer pink near bone, 1 hour.
Warm tortillas. Serve chicken, peppers and onion with tortillas and, if desired, lime wedges and cilantro.
