Roasted Fajita Chicken 0 Picture

Ingredients

  • 1 roasting chicken, 6-7 lbs.
  • 2 Tbs. oil
  • 3 Tbs. fajita seasoning
  • 3 bell peppers, any color, cut into 1/2" thick slices
  • 1 onion, sliced 1/4" thick
  • 6 flour tortillas (8")
  • Lime wedges and chopped fresh cilantro, optional

Preparation

Step 1

Preheat oven to 350 degrees. Brush chicken with 1 Tbs. oil. Sprinkle inside and outside of chicken with 2 Tbs. fajita seasoning. Place in large roasting pan. Roast 1 hour.

Meanwhile, toss peppers and onion with remaining oil and seasoning until coated. Arrange in pan around chicken. Roast until chicken is no longer pink near bone, 1 hour.

Warm tortillas. Serve chicken, peppers and onion with tortillas and, if desired, lime wedges and cilantro.
