Ingredients
- Crust:
- 3 C flour
- 1 C shortening
- 8-9 tsp cold water
- salt
- Filling:
- 1 lb bacon, fried and crumbled
- 3 C swiss cheese, shredded
- 2 C finely chopped onion
- 8 eggs
- 2 pints cream
- 1-1/2 tsp salt
- 1/2 tsp sugar
- 1/4 tsp cayenne
- red pepper

Preparation
Step 1
Crust:
Preheat oven to 450 degrees.
Combine and place in pie plate. Prick bottom and sides with fork. Bake for 10-12 minutes.
Filling:
In bowl beat eggs lightly with a fork about 30 seconds, add cream, sugar, salt and pepper. Spread one layer each bacon, cheese and onion in each pie shell. Add half the cream mixture to each. Bake 15 minutes at 425 degrees, then reduce heat to 300 degrees and bake for an additional 30-40 minutes.
Let stand for a few minutes before cutting.
