Ingredients

  • 8 oz wide flat rice noodles
  • 2 tbsp brown sugar
  • 2 tbsp lime juice
  • 3 tbsp soy sauce
  • 2 tsp veg oil
  • 3 scallions, thinly sliced
  • 1 garlic clove, minced
  • 1/2 cup cilantro
  • 1/4 cup chopped salted peanuts

Step 1

Soak noodles according to package instructions. Drain. In a small bowl, whisk together brown sugar, lime juice and soy sauce.
In a large nonstick skillet, heat oil over medium. Add scallion whites and garlic and cook, stirring, 30 seconds. Add noodles and soy sauce mix to skillet, cook, tossing, until noodles are soft and coated with sauce, 1 minute. Serve topped with cilantro and peanuts.
