Beefy Sweet Onion Soup

Ingredients
- 1/4 c butter
- 6 medium sweet onions, thinly sliced
- 3 tbs all purpose flour, divided
- 1 # top sirloin steak, cut into 3/4 inch cubes
- 2 tbs vegetable oil
- 1/2 c red wine
- 6 c beef broth
- 6 3/4 inch thick slices french bread
- 6 slices swiss cheese

Preparation
Step 1
Melt butter, add onions and saute 20-25 minutes or until onions begin to carmelize and are very tender.
Sprinkle 1 tbs flour. Remove from soup pot.
Toss beef with remaining 2 tbs flour. Pour oil in pot. Cook beef for 6-8 minutes.
Add wine and broth. Bring to boil, reduce heat and add onions and any juices. Cover and simmer 30 minutes.
Meanwhile bake bread at 450* until crispy, 8-10 minutes.
Pour soup into individual bowls,add french bread and top each bowl with swiss cheese. Allow to melt before serving.
