Ingredients

  • Brine:
  • 1 stalk dill
  • 3 cloves garlic
  • 1/4 medium white onion
  • 2 tsp mustard seed
  • 15 peppercorns
  • 1/4 tsp alum
  • 1/4 jalapeno pepper
  • 1 slice red pepper
  • 3-4 cucumbers
  • 4-5 medium cucumbers
  • bay leaf
  • 1 C canning salt
  • 1 quart white vinegar
  • 3 quarts water

Preparation

Step 1

Preheat oven to 225 degrees.

Fill jars with all ingredients.

Brine:
Bring all to boil. Divide brine among jars, leaving 1/4-inch from top. Seal with hot lids.

Place jars in 2-3 inches of water in a shallow pan and put in oven for 15 minutes. Remove to cool. (Makes enough for 12 quart jars)

Pickles will be ready in 2-3 months.
