- 1 1/2 pounds potatoes, scrubbed or peeled and cut into 1 inch cubes
- 2 tablespoons olive oil
- 1 lemon, zest and juice
- 3 cloves garlic, chopped
- 2 teaspoon oregano
- salt and pepper to taste

Preparation
Step 1
Toss the potatoes in the mixture of the oil, lemon, garlic, oregano, salt and pepper and wrap in foil.
Roast over a medium-high (400*) grill or oven until tender - about 20-30 minutes.
: Replace the olive oil with lard, bacon grease or other meat drippings.
: Add lemon wedges to the package.
: Sprinkle warm potatoes with feta cheese before serving.
