Stuffed Yukon Gold Potatoes

Ingredients
- 4 Yukon Gold potatoes, unskinned and halved
- 2 Tbl olive oil
- 1 Russet potato, peeled
- 3 oz Roquefort
- 1 egg yolk
- 2 scallions, sliced diagonally

Step 1
Preheat oven to 400 degrees.
Scoop out centers of Yukon Gold potatoes and reserve pulp. Toss potato halves in oil and season with salt andn pepper. Bake unitl golden and tender, about 15 minutes.
Dice russet potato and boil in salted water with reserved Yukon Gold until tender. Drain well and mash while warm. Add Roquefort, yolk and scallions. Season to taste with salt and pepper.
Sutff potato halves and bake for 20 minutes.
