Garlic-Cheddar Cornbread Muffins

Ingredients
- 1/2 cup butter, divided
- 1/2 cup chopped green onion
- 2 tsp. minced garlic
- 1 1/2 cups self-rising cornmeal mix
- 1/2 cup self-rising flour
- 1/4 tsp. garlic powder
- 1/4 tsp. ground black pepper
- 1/2 cup finely shredded sharp Cheddar cheese
- 2 cups whole buttermilk
- 1 large egg, beaten

Step 1
Preheat oven to 425 degrees. Generously grease a 12 cup muffin pan with 1/4 cup butter; set aside. In a small saucepan, melt remaining 1/4 cup butter over medium heat. Add green onion and garlic; cook for 2 minutes. Remove from heat and set aside.
Place muffin pan in oven to heat. In a medium bowl, combine cornmeal mix, flour, garlic powder and pepper; stir in cheese. In a separate bowl, combine buttermilk, egg and butter mixture. Add buttermilk mixture to cornmeal mixture, stirring just until dry ingredients are moistened. Spoon batter into hot muffin pan, filling tree-fourths full. Bake for 25 to 30 minutes or until golden brown. Cool in pan for 5 minutes. Remove from pan.
