Ingredients
- 8 oz grated swiss or Gruyere cheese
- 1 C water
- 5 Tbl butter
- 1 tsp salt
- 1/4 tsp freshly ground pepper
- 1/4 tsp ground nutmeg
- 1 C all purpose flour
- 5 large eggs

Step 1
Preheat oven to 425 degrees.
In medium saucepan, briing water, butter, salt, pepper and nutmeg to a boil. Remove from heat and add flour and beat with wooden spoon until mixture leaves sides of pan clean. Add cheese and beat until incorporated.
Beat in 4 of the eggs, one by one until thoroughly absorbed. Beat unitl smooth and shines.
Drop by spoonfuls onto greased cookie sheet.
Beat remaining egg with 1/2 tsp water and brush tops of puffs.
Bake in top third of oven for almost 20 minutes or until golden and double in size.
