Ingredients
- 2 carrots, shredded, about 1/2 C
- 1 Tbl balsamic vinegar
- 2 Tbl olive oil
- Pinch salt
- Pinch freshly ground pepper
- 4 slices prosciutto
- 4 whole basil leaves

Preparation
Step 1
In medium bowl, toss carrots, vinegar, oil, salt and pepper. Lay out slices of prosciutto. Top each with 1/4 of carrot mixture. Place basil leaf on top and roll prosciutto up and around basil and carrots, secure with a toothpick and serve.
