Sauteed Spinach
This green vegetable is good for you, and takes only a few minutes to make. It's best made with fresh spinach, but you can use frozen. If you use frozen though, be sure to drain out the excess water before sauteing.

- 4 cups fresh spinach, chopped (or 10 oz frozen)
- 2 tablespoons olive oil
- 1 large red onion, chopped
- 3 cloves garlic, chopped
- 1/2 pound mushrooms, chopped
- 2 teaspoons balsamic vinegar

Preparation
Step 1
1. Wash the spinach thoroughly and steam until wilted, about 5 minutes.
2. In a small skillet, saute the onion, garlic, and mushrooms. Add the spinach to the mixture and then splash with balsamic vinegar.
