Ingredients

  • 2.5 lbs ripe plum or roma tomatoes
  • 1/4 C olive oil
  • 5 cloves garlic, minced
  • 1 Tbl minced fresh oregano
  • Salt and freshly ground pepper to taste
  • 2 Tbl minced fresh basil

Preparation

Step 1

Pass tomatoes through food mill over bowl. Repeat as needed until all large pieces are crushed. Set aside.

Iin saute pan over medium heat, warm olive oil. Add garlic and cook, stirring frequently until softened, about 2 minutes. Add oregano and stir to combine. Stir in tomatoes and season with salt and pepper.

Bring to a boil, reduce heat to med-low and cook, uncovered, until sauce thickens, 15-20 minutes.

Stir in basin and cook 1 minute more.
