Ingredients
- 1 lb. zucchini, sliced
- 1 lb. roma tomatoes, peeled and diced large
- 1 quart canned crushed Italian tomatoes
- 2 cloves of garlic, crushed and chopped
- 2 stalks of celery, sliced
- 1 medium onion, sliced
- 1 green pepper, sliced thin
- 1 1/2 lb. sweet Italian sausage, sliced
- 1/2 t Italian seasoning
- 1/2 t basil
- 1/2 t oregano
- 1/2 t sugar
- 1 t salt

Step 1
Brown the sausage, celery and onion in a small amount of olive oil. Add the garlic and stir until it becomes fragrant, about 30 seconds.
Add the rest of the ingredients. If the soup needs to be thinned a little, add either water or chicken broth. Cover and simmer 30 minutes.
Adjust the seasonings and serve the next day for full flavor.
