  • 1 1/2 cups sugar
  • 1/4 cup cornstarch
  • 4 large eggs, lightly beaten
  • 1/2 cup fresh lemon juice
  • 2 tbsp butter
  • 1 tbsp lemon zest

Step 1

Heat oven to 325.
Bake a 9-inch prepared pie crust.
In a large heavy saucepan, combine sugar and cornstarch. Stir in eggs and lemon juice. Cook over medium heat, stirring constantly with a whisk, until mixture comes to a boil. Boil 3 minutes, stirring constantly. Remove from heat; stir in butter and zest.
Pour filling into baked pie crust. Top with meringue from Chocolate meringue pie recipe. Bake for 23 minutes.
