Ingredients

  • 2 cups flour
  • 2 tsp. baking powder
  • 3/4 tsp. salt
  • 1/4 tsp baking soda
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 2 eggs
  • 2 ripe bananas, cut up
  • 2 Tbs milk
  • 1/2 cup pecans or walnuts

Lightly grease a loaf pan, set aside. In mixing bowl thoroughly stir together the flour, baking powder, salt and soda; set aside. In small mixing bowl cream butter and sugar till light and fluffy. Add eggs beat well. In small bowl mash bananas with fork, stir in milk. In large bowl add flour mixture and banana mixture alternately to creamed mixture. Beat till smooth after each addition. Fold in nuts. Pour batter into prepared pan. Bake at 350* for 45-50 mins or till toothpick inserted in center comes out clean. Cool 10 mins and turn out of pan and cool on wire rack.

Note: I doubled this and it made 6 mini loaves and baked it at 325*
