Ingredients

  • 1 large beet
  • 1 Tbsp. balsamic vinegar
  • 1 can (15 oz.) chickpeas, drained
  • 1 lemon, juiced, and 1 tsp. of lemon zest
  • 3 cloves garlic
  • 3 Tbsp. tahini paste
  • 1 Tbsp. olive oil
  • Salt and pepper

Preparation

Step 1

Wash, peel and chop your beet into 1-inch pieces. Then place it in the center of a sheet of foil. Top with 1 Tbsp. of olive oil and 1 Tbsp. of balsamic vinegar. Wrap the beet chunks in foil and roast at 350°F for about 25 minutes (or until soft).

When cooled, blend the beet and remaining ingredients in a food processor until smooth. Add seasoning as needed.

Serve with cut vegetables and pita chips.
