  • 1 cup firmly packed brown sugar
  • 1/3 cup butter
  • 2 tsp cinnamon
  • 1 cup chopped nuts
  • 1/2 cup butter
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup sour cream
  • 2 cups flour
  • 1 3/4 cup (16oz) canned pumpkin
  • 1 beaten egg
  • 1/3 cup sugar
  • 1 tsp pumpkin pie spice

Preparation

Step 1

1. Preheat oven to 325F. Spray 13x9" baking dish with non-stick cooking spray. In a mixing bowl, combine brown sugar, butter, cinnamon and nuts. Transfer to another bowl, set aside.

2. For the batter, cream butter, sugar and vanilla in mixer bowl. Add eggs, beating well. Combine flour, baking powder and baking soda. Add dry ingredients to butter mixture alternately with sour cream. For the pumpkin mix, combine pumpkin, beaten egg, sugar and pie spice.

3. Spoon half of batter into 13x9" baking pan. Sprinkle half of streusel over batter, then spread pumpkin mix over streusel. Carefully spread the remaining batter over pumpkin mix. Sprinkle remaining streusel over top. Bake at 325F for 50-60 mins until toothpick comes out clean.
