Cedar Planked Brie Cheese with Raspberries and Almonds

Ingredients
- 1 - 12 " x 8" x 3/4 cedar-plank
- 1/2 cup plus 2 tbsp reserved Lindemans BIN 50 Shiraz
- 2 cups water
- 1 wheel brie or camembert cheese, 200-250 g
- 1 tsp + 1 tsp Ted Reader's World Famous BBQ Planking Spice
- 1 tbsp honey
- 1 tbsp almond silvers
- 1 tsp chopped fresh thyme
- 1/2 cup fresh raspberries
- 1 french baguette, sliced

Preparation
Step 1
Place plank into a tray or pan at least 2" deep. Mix water and wine together. Pour mixture over plank and if necessary, fill pan with additional water until plank is covered. Weight down plank to keep it fully submerged and soak for a minimum of 1 hour.
Preheat grill to medium heat (300-350 degrees).
Remove plank from water/wine mixture. Place wheel of brie onto the center of the pre-soaked cedar plank and sprinkle with 1 tsp Planking Spice. Mix together 1 tsp Planking Spice, 2 tbsp Lindemans BIN 50 Shiraz, honey, almonds, and thyme. Add raspberries, and mix gently until combined. Top brie with raspberry mixture.
Place plank onto grill and close the lid. Plank - grill brie for 15 - 18 minutes, until cheese is golden brown and slightly puffy, topping is hot, and almonds are a light golden brown. Remove plank from grill and allow to cool for 1 - 2 minutes.
Serveimmediately with Lindemans BIN 50 Shiraz and fresh sliced baguette.
