Ingredients
- 230 g fish
- 150 g boiled green peas
- 6 C stock
- 1/2 C minced coriander

- 100 g boiled bamboo shoots
- 75 g Chinese Ham
- 12 g dried Chinese black mushrooms
- Ingredient B
- 2 tbsp minced green onion
- 2 tsp minced ginger
- Ingredient C
- 1 egg white
- 1/2 tsp salt
- Ingredient D
- 1/2 tsp ea. salt, sugar
- 1/4 tsp pepper
- Ingredient E
- 4 tbsp water
- 2 tbsp cornstarch

Step 1
Cut the fish into 1/4" cubes, marinate in C. wash the ham, steam until done, tear into julienne strips. Soak the mushrooms until soft, discard the stems, cut into small cubes.
Heat the wok, add 1/2C oil and heat to 250F (120C). Fry the fish until pale, remove from oil and drain.
Keep 2 tbsp oil in the wok and heat. fry B until fragrant, stir in A and fry until pungent. Add the stock and bring to a boil. Mix in the fish, green peas and D, bring to a boil. thicken with E turn off heat and place in a serving bowl. Sprinkle on the coriander and serve.
