Ingredients

  • MARINATE:
  • 1 bunch of fresh basil (Finely chopped)
  • A few fresh tarragon (finely chopped)
  • A few leaves fresh thyme (Finely chopped)
  • 1 clove of garlic (chopped)
  • 6 sun dried tomatoes (chopped)
  • olive oil
  • salt and pepper
  • Japanese eggplant - cut into 1/4 inch thick slices
  • zuchini - cut into 1/4 inch thick slices
  • French bread
  • Goat cheese
  • Baby spinach

Preparation

Step 1

Mainate all veggies then grill them.
Cut french bread in half and pour left over marinate onto french bread.
Put goat cheese(room temp) spread onto bread.
Add grill veggies onto bread.
Put fresh baby spinach over veggies and cut sandwich.
EAT!
