Creamy Onion-Potato Soup

Ingredients
- 2 medium (8-10 oz) sweet Spanish onion
- 2 Tbl butter
- 3 stalks celery, thinly sliced
- 3 large potatoes (about 1.5 lbs), pared and cut into 1/4-inch sliced
- 5 C chicken stock
- 2 tsp dried dill weed
- Salt and Pepper to taste

Preparation
Step 1
Peel and thinly slice onions to measure 3-4 cups. Melt butter in large pot over medium heat. Add onion and celery, saute 2-3 minutes. Stir in potatoes, stock and dill. cover and bring to boil. Reduce heat and simmer 20 minutes or until potatoes are tender. Remove half of the soup mixture and puree in blender. Return puree to pot. Season to taste with salt and pepper.
