Ingredients
- 4 thinly sliced zucchini
- 1/2 cup finely chopped onions
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup grated raw carrot
- 1 8 oz. box stove top flavored stuffing
- 1/2 cup oleo

Preparation
Step 1
Cook zucchini and onion until tender. Combine soup, sour cream, and grated carrot. Fold in zucchini mixture and set aside.
Melt oleo and add seasoning packet from stuffing mix. Fold into stuffing.
Place 1/2 stuffing in bottom of long casserole, add vegetables, and then the remaining stuffing mix.
Bake at 350 for 30 minutes.
