Ingredients

  • 2 cups cooked chicken (can use store-bought rotisserie)
  • 3 celery stalks
  • 1 apple, cored
  • 1/4 cup sliced almonds
  • 1/2 cup red grapes, quartered
  • 3 T mayonnaise
  • Salt
  • Pepper
  • Boston lettuce leaves

Preparation

Step 1

In a food processor, pulse the chicken, celery and apple SEPARATELY until chopped.
Transfer them to a bowl and add the almonds, grapes, and mayo.
Stir until combined.
Season to taste with salt and pepper.
Serve the mixture in lettuce cups.
