Caramel Corn
Bob & Linda and family gave everyone this recipe and their own homemade caramel corn one Christmas. It is special.

Ingredients
- 8 cups popped corn
- 3/4 cup packed brown sugar
- 6 Tbsp. butter
- 3 Tbsp. light corn syrup
- 1/4 tsp. baking soda
- 1/4 tsp. vanilla

Step 1
Preheat oven to 300 degrees. Remove all unpopped kernels from the popped corn. Pour popcorn into a 17 x 12 x 2 inch baking pan.
In a 1 1/2 quart saucepan, combine sugar, butter, corn syrup, and 1/4 tsp. salt. Cook and stir over medium heat until butter melts and mixture comes to a boil. Cook, without stirring, for 5 minutes more.
Remove from heat. Stir in baking soda and vanilla. Pour over popcorn and gently stir to coat it.
Bake in a 300 degree oven for 15 minutes. Stir. Bake 5-10 minutes more. Remove corn to a large bowl to cool. Store in a tightly covered container.
