Applesauce Oatmeal Cookies

Ingredients

• 3/4 cup shortening
• 1 cup brown sugar
• 1 egg
• 1 cup sweetened applesauce
• 2 cups flour
• 1/2 tsp. baking soda
• 1/2 tsp. salt
• 1/2 tsp. cinnamon
• 1/4 tsp. nutmeg
• 1 1/2 cups rolled oats
• 1/2 cup raisins

Preparation

Step 1

In medium bowl, with mixer on medium, cream shortening, sugar and egg until smooth.
Beat in applesauce.
Combine dry ingredients and add to applesauce mixture, beat at low speed for 2 minutes.
Stir in raisins and oatmeal.
Drop by tablespoonfuls onto greased cookie sheets and bake at 350 degrees for 12 to 15 minutes.
Cookies will spread while baking.
Cool on wire racks.
