- 4 servings
- 1 pound of medium mushrooms (fresh)
- 3 T olive oil
- 2 T tawny Port
- 1.5 tsp balsamic vinegar
- 1.5 tsp honey
- 0.5 tsp salt

Preparation
Step 1
1.Cut stems off mushrooms even with edges of caps. Set aside. Reserve stems for another use.
2.Cook oil, Port, vinegar, honey and salt in a heavy 10 inch skillet over high heat until mixture begins to sizzle, about 3 minutes.
3.Reduce heat to medium high.
4.Add mushroom caps, rounded side down.
5.Cook until liquid reduces to a thick syrup and coats mushrooms with thin bronze film, shaking pan occasionally, about 15 minutes.
6.Turn mushrooms.
7.Increase heat to high.
8.Cook 1 minute.
9.Adjust seasoning and serve.
Can be prepared one day ahead. Cover and refrigerate. Re-warm in skillet over low heat.
