Teriyaki Chicken Drumstick

Ingredients
- 1/4 c pineapple juice
- 3 tbsp soy sauce
- 1 tbsp light brown sugar
- 2 tsp cornstarch
- Cooking spray
- 8 skinless chicken drumsticks
- 3/4 tsp freshly ground pepper, divided
- 1 c fresh pineapple chunks
- 1 c peeled and sliced kiwi fruit
- 1 c halved fresh strawberries
- 1 tbsp chopped fresh cilantro
- 2 tbsp lime juice
- 1/2 tsp grated peeled ginger

Step 1
Combine pineapple juice, soy sauce, brown sugar, and cornstarch in a small saucepan over medium heat, stirring with a whisk. Bring to a boil. Cook 30 seconds, stirring constantly with a whisk. Remove from the heat.
Heat a grill pan over medium heat. Coat with cooking spray. Coat chicken with cooking spray, sprinkle evenly with 1/2 tsp pepper. Add chicken to pan; cook 8 mins, turning occasionally. Reduce heat to medium; brush with soy sauce mixture. Cook 15 mins or until done, turning and brushing with sauce.
Combine remaining 1/4 tsp pepper, pineapple chunks, kiwi, strawberries, cilantro, lime juice and ginger in a bowl. Serve with chicken.
