Peanut Butter-Honey Treats

The sticky Rice Krispie and marshmallow treats everyone loves, but with the addition of peanut butter and honey. Keep treats in a small cooler to keep stickiness at bay. The recipe is adapted from Stephanie Banya's book "Treat" (Clarkson Potter, 2015).

Ingredients

  • 6 tablespoons (3/4 stick) unsalted butter, plus more for greasing the pan
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 16 ounces marshmallows
  • 1/2 cup creamy peanut butter (not natural)
  • 1 teaspoon vanilla extract
  • 6 cups puffed rice cereal
  • 1/2 cup honey roasted peanuts, chopped (optional)

Preparation

Step 1

Grease an 8-by-8-inch pan and set aside.
In at least a 4 quart saucepan, melt butter, honey and salt together, stirring frequently. Over low heat, add marshmallows and cover pan. Let sit for two minutes, remove from heat and stir in peanut butter and vanilla and stir until smooth. Gently fold in cereal.
Scrape into buttered dish. Butter hands and press down on treats firmly to make a nice compact bar. Sprinkle optional peanuts over the top and gently press them in.
